Helgen/Juniper Berry Mead (Part 1)

Thank you for watching part one of my Helgen series! Learn how to make a juniper berry mead fit for a dragonborn!

To make this brew I put the following into a 1 gallon carboy:
2lbs of sourwood honey
1lb of butterbean honey
1 cup of strong black tea
1 cinnamon stick
.5 oz coriander seeds
.5oz fresh ginger
3-4 dried tangerine peels
1.3 oz juniper berries
1 packed of Red Star Premier Blanc wine yeast
Spring water to fill

Starting gravity: 1.111

As I’m watching my way through all of your videos I noticed something: after mixing on the honey and oxygenating your honey and water, you top up your fermenter… and take a gravity reading without re-mixing. As your mix has a higher density than the water you’re adding, aren’t you worried your gravity reading might be off? When I add that second helping of water I some times notice a difference in colour between the bottom and the top of my fermenter. Hence, I give my carboy an extra little shake after topping up.

This mead sounds right up my alley. Yum!

Why do you not swish your mead b4 taking you initial gravity reading? I would think the addition of the water after the shake would leave an uneven gravity. Aside from this nit, I'm loving your videos tho.
