Mizrahi Jews that lived in Arab states for centuries that were expelled by Muslims went to Israel and brought their culture and cuisine with them. The are also Arabs that live in Israel and are therefore part of the culture of Israel. It's not difficult to understand.

Falafel - Egypt.
Shawarma - Turkey.
Hummus- Syria.
Shakshuka - Tunisia/Morocco.
When googling the food list, these were the corresponding countries of origin.
A slightly deeper dive will reveal maybe a secondary country or its the modern day take of food from an older culture from the same region. Also I am aware of the fact they're all mostly Arabic and from a similar region.

Looking up Israeli food, its a blend of Jewish and Arabic tastes.

It's not an opinion, it's just what I found, if it's accurate or inaccurate, that's not on me. Would be interested in learning more about it.

I visited Israel for the first time as a teen a few years ago, and coming from America, I was like "WHOA! This food is amazing! I am going to eat this everyday I am here!" Then my Jewish friend was like, hey we are going to go outside of the city and have some different food, but not to tell anyone. I was like okay...don't tell out parents? Weird but okay. Go to a spot, run down, no interior design, just a wall with chipped paint. Order a shawarma...I swear to you it was the BEST thing I have ever had in my life. To this day my mouth waters when I think about it. So why did my friend tell me to keep it a secret? It was a Palestinian shop owned by this old Palestinian lady.

They Israeled Palestinian food.
The word Israeled is now on Urban Dictionary:

when a person tells you that your property is theirs (when it obviously isn’t), and demands you just give this property to them, and if you refuse, they take it by force and the law will somehow be on the their (israeling) side.
