Lance Shaner of Omega Yeast Labs breaks down the vital stats of yeast strains -- phenolics, flocculation, attenuation, temperature range, alcohol tolerance, flavor profile -- and offers expert advice on using this information to pinpoint a yeast strain that will get you the flavor and performance you want. There are no brew shops where I live, what is a good place to order malted grain in bulk? I would prefer quality grain.

Is there a yeast I can use in making lagers and pilsners but with a fermentation temp of around 72-74 degrees? I've heard I can get off-flavors if fermenting beyond the recommend temps.
