In cooking scant means not to fill completely (& definitely not packed) ex: scant 1/4c means closer to 3 Tbsp than the 4 Tbsp it would normally be Big 🙋🏻‍♀️ Howdy from Texas, you 2 have a Blessed day🎉

I use Carb Quick for my biscuits. For drop biscuits I use 1C Carb Quick to @ 1C heavy cream, for cut out biscuits, I use 1 C CQ to @1/2 C HC. Nothing else, unless you want to add cheese or spices. I use a cast iron pan. I also use my drop biscuits for the tops of my cobblers, adding the sweetner substitute of choice and cinnamon. It works great!

I make a recipe very close to this one every week. Ive even made it into a loaf and use it exclusively for my sandwich needs. Mine is super simple
1/2 cup shredded cheddar. 1/2 cup shredded mozzarella. 1/2 cup almond flour. 1 teaspoon baking powder. 2 teaspoons of dried parsley. 2 eggs. I mix all the dry in a bowl then smash in the 2 beaten eggs until everything is well coated. Using a cookie scoop i drop then onto a parchment lined sheet. Pat them down lightly and for me i enjoy topping them with sesame seeds before baking. Bake them 400 degrees for 12 mins.

When I don’t want to make keto biscuits from scratch, Carbquick is a nice, easy way to make drop biscuits. The texture is really good. It’s not clean keto so I don’t use it a lot but it is nice for the convenience every once in a while.

These are the best keto biscuits I've ever seen. I've made Bisquick Old Bay cheddar biscuits. The Old Bay is sprinkled into melted butter and brushed on top of the biscuits as soon as they come out of the oven. But your way works too.

I've made keto cheddar biscuits...could've been Wholesome's...and TOOK them to Red Lobster. Hubby was mortified😂, our friends tasted (of course brought enough to SHARE, or else, hey, you know...) and they couldn't tell the difference...😋😄

Scant is the opposite of heaping, so if heaping is just over, then scant is just under...So one is convex and the other is concave spoon or scoop-wise. 🙂 That said, "cookie scoop" is not a standard measure, LOL. so do what you want.

Use Victoria's Keto Kitchen flour recipe and make dream biscuits from America's test kitchen. They can be adapted to make the cheddar bay biscuits. They hold together phenomenally and taste delicious.

If you don't need to worry about gluten, I suggest using carbquik, which is a low carb version of bisquik, for making biscuits, short bread, etc.

Scant means you don’t fill your cup/tsp/tblsp fully. Just slightly less than asked for. The biscuits certainly look delicious. I’ve tried almond flour to make both biscuits and bagels. Wasn’t a fan of the texture. I might experiment with half and half almond/coconut flour. See how that goes.

I used to use carbquik until I discovered Victoria's flour blend. I use that exclusively now for any recipe that requires flour. Not her newest one but the one she calls 2.0. Carbquik does make a good biscuit though. You should try some recipes with it.

I use Carbquik very often. My best biscuit recipe is- 1 cup Carbquik, 1 cup King Arthur Keto flour, 4 tbsp. real butter, 4 tbsp. butter powder, 1 1/2 tbsp. baking powder, 1 tsp. salt and 1/4 cup water, and 3/4 cup HWC. Mix well and let it sit for about 5 minutes. The sprinkle a little more of the KA Keto flour and fold it a few times to make layers. Cut out with a biscuit cutter and bake at 400 F for 15- 18 minutes. (Depending on the thickness I make them and the size of the cutter I used.) You can brush the tops with a little melted butter, add herbs, cheese...

I think you are supposed to make 12 biscuits for 5 carbs. I will try them and the egg dish sounded great.

I have been using the ATK dream biscuit recipe with 3 cups Victoria's last flour (192bamboo/168almond/80egg white powder/20ground psyllium10xanthan) and 2 cups of cheddar with butter chive topping. I measure out using a 1/2 cup (1/3 cup is good too) and then shaping before baking. Butter/chive topping. Freeze them.
Sausage patty and a fried egg and mama is happy.

Whole sandwich is less than 5 because of the fiber, it is extremely filling, like extremely. My diabetic parents could not finish the full biscuit.
