I've been using the Vitornox knives since they were Forschner, which then merged and became Forschner Vitornox, then they dropped Forschner all together. They're absolutely the best knife for the money and if you search eBay, etc. and find earlier Forschners, they're slightly thicksteel. even better steel.
I come from a long line of butchers and restaurateurs and ha e used all kinds of pricey, cheap, good and bad knives and these are the first I'll reach for. I have three angles of boning knives, chefs knives (they're terrific), breaking knives and a 14" cimitar that's a beast. I also have a 6pc. steak knife set from the 60s i wouldnever part with.
Sharp, stays sharp, easy to sharpen...
People collect them and you can find good deals regularly on eBay, as well but, no Bearded Butchers logo. 😉

Been cutting meat for years but you guys make me look like a first timer . Wife and I cut up completely and ground up 4 adult elk in 8 hours cut tenderize and vacuum seal anything that makes a steak . Nice job guys

Beautiful! I've got both knives, best value for the money. The quality control at Victorinox is amazing. There's a reason they're the largest knife company in the world.

Great knives for the job! Been through a few of the 6 inchers. Sharpened them down to a nub. Lol. Made me happy to see I've been using the right thing.

I have the same boning knife, but i've been using a very old Chicago Cutlery breaking knife for years, and couldnt imagine replacing it. Oh, i'm the guy that contacted you to buy the vf608 plus and extruder. Yall rock btw.

I always watch your videos.
My favorite parts on that steak usually get cut off. Perhaps because of the name "Tomahak"
I love the rib meat on that bone & the fat. I never even trim not even a smidgen off.
As far as the knives, you sold me on them... I have bought several.

Was wondering if you guys had ever tried mundial knives, ?they are from Brazil.I was gifted a game cleaning kit around 12 years ago still using same have purchased 8 inch breaking and 6 inch Simi stiff boning for both my son's, easy to sharpen when needed which isn't often mainly just hit the rod and go .
