Epsom Salt is also called Magnesium sulfate heptahydrate. That mean the Magnesium sulfate (MgSO4) is surrounded by seven H2O molecules. The formula is therefore written as:

MgSO4 • 7H2O

where the dot between the MgSO4 and 7H2O means there are seven water molecules around the Mg ion.

If we heat the Epsom Salt we can force the water molecules away and we'll be left with just MgSO4. This is called anhydrous Magnesium sulfate.
