Sweet Pandan Cupcakes Recipe [No Sugar And Cake Flour]

Easy low carb cupcakes without sugar and cake flour. Also its keto friendly cupcakes because I used almond flour.
Ingredients
Cupcakes:
● 2 eggs
● Pandan pasta [1 tsp]
● Butter [75g = 1/3 cup]
● Stevia sweetener [1 tbsp]
● Almond flour [120g = 1 cup]
● Baking powder or baking soda [1 tsp]
Cream:
● Philadelphia cream cheese [200g]
● Stevia sweetener [2 tsp]
● Whipping cream 33% [50g = 8 oz]
● Pandan pasta 1/2 tsp
● Blueberry for decorating
Step by Step Recipe:
If you want to make your own homemade almond flour
1. Pour boiling water over the almonds. After 5 minutes, the skins of the nuts can be easily peeled off
2. Let the almonds dry or leave in the 90 degree oven for about an hour. Stir from time to time to keep it from burning
3. Grind the almonds in a grinder. It is best to use the impulse mode to keep the blade from heating up, otherwise the flour may start to stick together
Or just buy ready-made almond flour and skip this steps ;)

Cupcakes:
1. Separate the eggs
2. Add pandan pasta to the yolks and mix it. Then add warm butter and stevia sweetener. Mix again
3. Beat the whites separately and add to yolks
4. Gradually add flour and baking powder or baking soda (Whatever you prefer to use). Mix well
5. Bake 20-25 minutes at 180 °C / 350 °F
6. For cream mix tougher Philadelphia, stevia, whipping cream and pandan pasta
7. Decorate with cream and blueberries
