Fun fact: You actually can do it with no items. Due to a glitch when you log out and log back just before you hit the ground the game ignores fall damage, so if you get the Ender Dragon to hit you he will send you into the air and let you break the End Crystals. After that you can just punch him to death.

Tip for fighting the Ender dragon: only take what you really need especially if it's your first time killing the dragon if you have a full inventory you will become stressed and panick, when you are stressed you play worse
