The cooks for the sultans were usually Greek, Armenian, Persian. As such, the Ottoman cuisine is largely influenced by these peoples. Even if new recipes were invented in the Ottoman Empire, it is important to note that many ethnic groups were part of the empire. So it is very hard to label it as I.e. Turkish. The only thing certain is that the Ottoman cuisine is very much influenced by other cuisines. Most notably Byzantine, Arab and Persian.
