I believe that custom started back when silverware was still often made of silver in higher end eating establishments. The silver may react with the salty and often somewhat accitic caviar, giving it a metallic taste. You are correct that stainless steel utensils won't affect the taste, so now it is more of a custom, not a requirement.

Silver (as in, Sterling Silver) was the *real* bad one. For some reason, Silver is reactive with some of the compounds in Caviar, which leads to both odd metal tastes and a tarnished spoon.

I trust you that the spoon is ok, but it's worth mentioning that if sometting is "odorless and tasteless, " it could *still* denature the flavor or odor of something it touches. This is why some common metals have "smells". All solid pure metals are completely scentless, but the oils in your fingers undergo a chemical reaction that is *_catalyzed_* by certain metals, creating volatile compounds you can smell. The metal is in this case completely scentless, but it _causes_ a smell to emerge via the things it touches!
