That is the 3rd Temple. Zerubbabel's Temple and foundation was completely replaced under Herod. Herod's Temple was not the same as Zerubbabel's Temple. Jews continued to practice animal sacrifices after 70 CE. This can be seen during the Jewish–Roman wars of the second century CE and in certain communities. So animal sacrifices never came to a complete end. The Samaritans still practice animal sacrifices as in accordance to the Laws of Moses for Passover.

Remember it was the Byzantine Empire a member of the EASTERN part of the Roman Leg that destroyed Jerusalem not the Western Empire of Roma.

Uhm, yeah. As much as the overpaid tour guides in the Old City would like us to believe that, those are NOT the stones from the 70 AD destruction of the temple. They are likely from much much later. Josephus stated quite clearly that the site was razed to clean dirt (Wars, Book 7, chap. 1). The Romans actually took the time to take all the rubble from that temple away and leave nothing that could potentially be sued to rebuild it. Throughout history, there have been many failed attempts to rebuild the temple. Those stones could be from any one of them. But the likelihood of those being from the 70 AD or Second Temple is right around zero.
