Paternity Leave Pantry: Pasta with Mushrooms, Radicchio and On-Purpose Shallots and Garlic

"Recipe"

a pat of butter
a glug of olive oil
A couple shallots, chopped
a couple garlic cloves, chopped
some fresh rosemary and oregano
a few mushrooms, chopped
a head of radicchio, chopped
a splash of sherry vinegar
8 ounces of dried pasta
salt and pepper
pecorino to finish

Heat a pan with oil and butter. Add the shallots and garlic. Go get herbs and forget about the onions and garlic and burn them a little but totally on purpose.

Add the herbs and salt and pepper and then the mushrooms and radicchio. Let them get nice and soft while you boil pasta. Deglaze with vinegar. Add the drained pasta and some of the pasta water.

Keep it all rolling until it's glossy and unified.

Season to taste, then serve with pecorino and a little more olive oil.

In literally 50+ years of watching cooking shows (I was a weird child who loved the Galloping Gourmet) I have never see anyone smash mushrooms, and it is GENIUS. I will absolutely be doing that in the future!

Looks delicious! Also, I'd be the only one in my home to eat it as my husband doesn't like radicchio and my toddler has a very specific...toddler diet.... 😂 might make it out of spite 😂 thank you for keeping up with the effort and congrats on the the new addition!
