Ingredients

50 lbs. "00" flour
20 lbs. water
3 lbs. extra virgin olive oil
2 lbs. fresh yeast
1 lbs. sea salt

Directions

Pour yeast into lukewarm water and activate for 5 minutes.
Mix flour and salt in mixer until blended.
Add water, yeast & olive oil.
Mix 8-10 minutes until smooth and cohesive.
Divide into 430g dough balls.
Rest at room temperature for 30 minutes.
Bake and enjoy!
