My mom sometimes cooks egg plants too! She grills them, slices into pieces, pours "gingered"^ fish sauce and melted pork fat on them.
And yes, this dish is a delicacy but not many families in Vietnam can enjoy this because they use gas stove while we use electric stove so that we can enjoy grilled food. However, she says eggplants are "poisonous" if eaten regularly.

(^): "Gingered" means fish sauce with chilli peppers, sugar, (MSG, I think) and (grated or often thinly sliced) ginger.

Eggplant is my favourite vegetable! But I might try mixing the soy sauce with the ginger and bonito flakes before putting them on it - I just don't like ginger clumped up, and I (regrettably) really dislike bonito flakes (I wish I loved them, because I have lots of packets - maybe I'll like them better when they're mixed into something).

For me, I will NOT grill it directly on top the gas. I will put it on a pan & grill it for safety. 😅. Will also add some chili to it.
