the idea that each of the rats dies one at a time and the rest eat the dead one until there is only one left who esentialy earned his freedom thru the death of all the others being the "rat king" makes sense in a folkloric way since the main phrase associated with rat kings is "there can only be one!"

The reasons why we don't find living examples of rat kings; Rats are usually able to untie their tails from a knot with other Rat tails, and if they can't untie their tails Rats will surely gnaw through their own tails Jigsaw be proud. Hence why most people believe something killed the whole den of rats at once usually during the winter, to create a Rat King.
