Baked Ziti for Two

Baked ziti is classic Italian comfort food. It has baked pasta with sausage, tomatoes and all kinds of ooey gooey cheese. The best part is this recipe is the perfect amount for 2-4 people.

Ingredients needed:
4 oz. ziti or penne pasta (about 1 1/2 cups)
1 tbsp olive oil
1/2 lb. ground sausage or hamburger
1/4 cup chopped onion
1 tsp minced garlic
15 oz. crushed tomatoes
1/2 tsp salt
1/2 tsp italian seasoning
1/2 tsp dried basil
1 cup spinach
1 1/4 cups mozzarella cheese, grated and divided
2 Tbsp Parmesan cheese, grated

Boil pasta until al dente.
In a frying pan add olive oil and onions, saute until onions are tender.
Add in sausage and garlic. Cook until meat is cooked through.
Add in tomatoes, salt, and seasonings.
Simmer until sauce thickens up.
Add in cheese and stir until it melts.
Add in spinach and stir until spinach wilts.
Combine sauce and pasta and pour into a 6 inch baking pan or loaf pan that has been greased.
Add in pasta and sprinkle top with 1/4 cup mozzarella and 2 Tbsp Parmesan cheese
Bake in a 350 degree F oven for 20 minutes or until headed through and cheese is melted.

I am with you on leftovers. I can’t really stand to eat the same dinner for more than two days. I live alone so I’ve basically just stopped cooking. But your small batch recipes are opening up new possibilities me. Thanks!

I have made a similar small batch that I improvised from leftovers.After layering pasta, meat and cheese, I popped it into the microwave for several minutes and it was ready.

Tip I've found especially with dishes baked in the oven that have noodles, is dont even bother with boiling them. At minimum 2 less dishes and these recipes usually result in very mushy noodles and people usually just dont mind because it all melds together anyway. Just add extra water to the dish, about equal to the weight of the pasta(add a lil extra for evaporation) and put the uncooked noodles in and since the dish should get up to quite high temps all throughout it and bake for a good while, the noodles will cook the same.

Also! Rinsing pasta is a bad idea if you did boil beforehand because you greatly reduce its capacity to hold on to sauce by risning away the starchy like, crust idk

When I worked at Taco Bell many years ago they used a super large potato masher, worked very well. Even today I use a potato masher and the meat comes out nice and fine. Main thing is working the meat when it starts getting soft.

LeAnne. You live in Utah now. Go to the Harmons cheese counter and get the real Parmesan cheese. It makes a HUGE difference!
