Here’s a one pot recipe for Soya pulao that is soo simple to make. It’s tasty and nutritious, has the goodness of proteins as well!

Ingredients I used:
- Around 1/2 cup soya beans + water for soaking
- 3/4 cup rice
- 1 onion, roughly sliced
- 2 tomatoes, roughly chopped
- 2 green chillies
- 1/2 tbsp ginger garlic paste
- salt
- 2 to 3 tbsp oil/ghee (I used a mix of both)
- 2 bayleaves
- 1/2 inch cinnamon stick
- 6 to 8 peppercorns
- 2 cardamom//elaichi
- 1/2 tsp jeera
- 1 star anise
- 1 cup water
- 2 tbsp coriander leaves

Procedure:
- Soak soya chunks in hot water and rice in room temperature water for 20-30 mins.
- Drain away water from both.
- In a pressure cooker, heat oil/ghee and add your whole spices (bayleaves, cinnamon, cardamom, star anise, pepper and jeera) and add your onions and ginger garlic paste. Cook till onions are golden on sides.
- Add green chillies, tomatoes and mix it well.
- Add your red chilli powder and biryani masala. Mix well.
- Lastly add your soaked soya chunks, rice and water. And pressure cook till it leaves one whistle.
- Open the cooker and wait for 5-10 mins before serving so that the rice is flaky. It will be sticky if you serve it immediately.
