Ive stopped being on turkey duty ever since i moved out of my parents house. And even though i pretended to hate the prep, i lowkey miss it. Im super tempted to make this just for myself with a chicken or something!

@10:47 my dad stuffed the turkey with stuffing this year after watching me NOT do this for YEEAARRSS. The bird was so freaking dried out.

I usually use Alton Browns method. But I like to change it up on certain tips. The brine from frozen is great and will start that this weekend. And I guess I have to hunt down some zatar. Subscribed!

Brian Lagerstrom recently did a turkey video and he cooked the turkey upside (breast) down so the breast meat wasn't overcooked. I liked your idea on spices, how to keep everything sanitary and how you dried the turkey to make it crispier. Great job!

Edit to add those turkey grabber claws are also good for any large meat. Pot roast, pork sholder etc. We have brined many a turkey.
Never had enough fridge space so we VERY meticulously monitored the brine in a cooler.
This method does require a good cooler, lots of ice and a good thermometer.

Nice well done, love your kitchen, need to find some za'atar spices tomorrow for the rub.... Over the years my method is very similar with a few additions. Main one is to butterfly / spatchcock the turkey at some point, this helps to cook the legs quicker as they need higher temperatures than the breast. I also have used Gordon Ramsey's idea on putting bacon over the breast for many years, similar concept as delays the breast cooking too fast while the legs can get to a higher temperature (~200F) faster without overcooking the breast. Temperature probes are a godsend.

Is there anything about wet brining that is better than dry brining. I once did a wet brined turkey. It was great, but a pain.

I now dry brine, and I'm still happy with the results.

Love the idea of creative spices. Two suggestions: To get the legs and breast properly cooked either Spatchcock the bird or cook the breast and legs separately. It's easier to carve off the breast meat if you remove the wishbone before cooking. Otherwise Love all your videos. Keep it up.

I'll be real, we stuff our turkey with meat stuffing. Yes, the breast meat is dry... but to be fair, it is the greatest gravy and meat stuffing I have ever indulged.
