Here's what it boils down to. Is the food worth $500? Absolutely fucking not. Is the experience worth $500? Maybe. Fine dining has never been about getting the bang for your buck in terms of food. It's about the atmosphere, the prestige, the experience of fine dining which is why the food is often more intricate and eye-pleasing than it is delicious. The visual appeal is what they're offering you, not necessarily the food.

At jiro’s restaurant they have the best quality of everything. Like they massage squid in 8 hours because they think they can always do better.
