Yes, the key ingridient of the entire bowl of bibimbap, as we know a sauce is often the most important one in a dish, is Gochujang which is fermented one.

Koreans usually don't use white or brown sugar. That's more of an American thing. It's usually rice syrup for sweetness with mirin for added sweetness and acidity not lemon juice. The combo of white and brown sugar was only adopted by Koreans in LA during the great migration of the 80s just appeal to American tastes however in Korea and especially where i lived, the sweetness is very low in comparison to the American version. I can't say I've ever seen anyone use lemon juice though. That's a new one. Citrus can definitely null a lot of the taste from sesame oil which is why they are often not used together in traditional cooking as they cancel each other out.

Gotta get some actual plum syrup but it tastes great even with a substitute!

If you like bibimbap, know this. If you want to continue eating good bibimbap, you need to buy good red pepper paste. It's like making tomato pasta, you have to have a good tomato sauce. Always avoid Chinese red pepper paste that can kill a person if they eat it. Be sure to check the country of origin. Be sure to purchase red pepper paste with a high red pepper powder content. If the red pepper paste is not tasty, the bibimbap will be a mess no matter what the ingredients are.
