The BEST Soft & Chewy Oatmeal Raisin Cookie Recipe | Healthy Oatmeal Raisin Cookies

Hello everyone! Welcome to my channel! I'm going to show you how to make the BEST easy and classic OATMEAL RAISIN COOKIE. They are soft, chewy, and healthy because I used brown sugar and whole wheat flour instead of regular flour and granulated sugar. Those substitutions made it slightly healthier for me, and made me feel less guilty eating them. Recipe is below.
🌟TODAY'S RECIPE:
Ingredients:
1 cup (2 sticks) butter, room temp
1-¼ cups brown sugar
2 eggs
2 tsp vanilla extract
1-½ cups whole wheat flour
1-½ tsp ground cinnamon
1 tsp baking soda
1 tsp cornstarch
½ tsp salt
3 cups quick oats
Add-ins: 1 cup raisins. You can also add in chocolate chips, nuts etc., just do not exceed more than 2 cups of add-in ingredients.
Method:
- Preheat oven to 350*F. Line a baking tray with parchment paper.
- Mix the whole wheat flour, cinnamon, baking soda, cornstarch, and salt in a medium bowl for your dry ingredients. Set aside.
- Cream together the butter, and brown sugar for 3 mins in a large bowl, with a hand or stand mixer. Very important to mix for a full 3 mins.
- Add the vanilla extract, and eggs, then mix well again for about 1 min.
- Next add the dry ingredients into the wet ingredients, and mix very well for a full minute or so.
- Add in the quick oats, mix well again. Then add the raisins, or other add-in you are using. Mix for another 30 seconds to a minute but do not over mix. The cookie batter is done.
- Roll out the cookie dough with a cookie scoop into balls and place on the baking tray. Place them a few inches apart so they have room to bake and settle down. Each tray should have about 6 cookies. Put the rolled out dough on the tray in the refrigerator for 10 mins. Press down the cookie dough to flatten a bit.
- Take the tray out of the fridge and put it in the preheated oven. Bake for 12 mins till brownish on the edges.
- Let the cookies cool down in the same baking tray after you take them out of the oven, then cool them further on a rack.
