creamy red kuri squash soup and squash puree

What can you make from one red kuri squash? Soup, perfect for these colder autumn days and puree from which you can make much more.

Soup recipe:
- 450 g red kuri squash
- 1 small onion
- 2 garlic cloves
- 1 potato
- fresh ginger root - 1 inch (2 cm) piece
- salt
- pepper

Chop all ingredients. Cook the chopped onion in a little oil. Add red kuri squash and 1 l of water (about 4 cups). Add ginger, garlic and potato and cook for about 20 minutes until everything is soft. Add salt and pepper to taste. Put in a blender and blend until smooth.
