I'm working on this right now and there's a lot you need to do . State laws are very strong on farmers markets.

Hello.
I'd like to sell smoked brisket sandwichs at farmers market with local beef. It would be precooked, and then upon order, place brisket on buns. I do a fabulous brisket, but I don't know if it would work at a farmers market. I would have to bring it cold and warm up as ordered, or bring hot and all kept hot. Do you have any information?
