We have about 200 scapes to deal with every year and freeze most of them, but I flash freeze them first so they are easier to "pour" when we go to use them. Just spread them out on parchment paper on a baking tray, put in the freezer for an hour, then into the plastic bag. You can also dehydrate them until brittle dry and grind up in a coffee grinder to make garlic powder.

Great ideas. You can also store in Mason jars that will extend longer than Ziploc bags.

THANK YOU for this video! I am SO enamored of garlic scapes (after first hearing the term from Karen Bertelsen of the blog "The Art of Doing Stuff" several years ago), that I just bought 3 pounds of them at my (not so) local Asian market that I make a special trip to visit every couple of weeks! Thank you for this video, because as a singleton, I wondered how on earth I was going to preserve these things! Raw or cooked, they're absolutely fantastic, so great in salads, raw! BUTTTT....should the scapes be blanched first for a few minutes before their frozen, like many other veggies?

Great video, I only have 35 plants this year so, , , they will never make it to a freezer. I have also left them out for over a week on the counter and on the end that was cut they developed little white balls (very small) they had another garlic flavor that was different than the scapes. It was an accident but if you oops, , , it's not all bad.

I love garlic in general, and the scapes are my favorite part! I’d always been told they were only worth eating when completely fresh and stuck to using them that way. I’m glad to finally hear otherwise. Thank you for sharing your knowledge on the matter.

Have you ever tried drying them? I’m wondering if that lovely flavor would survive the process.

You should get yourself a 'vac pack' machine if you want to remove ALL the air. _I wouldn't want to live without one. Too many uses to list._
