I've made these on the dehydrator since I don't got a smoker and they come out good but the casings are tough. I've found out that I can weaken them by running them over steam. I guess smoking would steam them a little. I also buy the celery juice powder from you guys and love it. I found it best to let marinate for 36 hours to get the best color and texture. I need to pick some more up soon.

Why do you use the sodium nitrate and not just the seasoning and cheese? I have people that are nitrite/sulfite sensitive so just wondering
