Home processing meat isn't difficult. In this video we provide detailed instruction on how to grind and stuff the venison from wild game we took into delicious breakfast and Italian sausages. It's a great way to fill the time between deer hunting season and spring turkey hunting an fishing season. Doing it yourself can also save you quite a bit of money, as opposed to taking your deer to a butcher! You can even use some of that meat you have frozen and don't know what you want to make with it. If you don't hunt, or had a slow season, this method will work just as well with meat from your local butcher shop!

I enjoyed your video. I like to use a c clamp to hold the stuffer to table so you can use free hand to direct the mile of sausage coming out ha. Thanks for tip on letting the meat absorb seasoning inside the casing. You may have saved my learning the hard way on that one. Where were you all the other times I learned that way? Ha Ha have a great winter from North Bay Ontario.

My favorite is bratwurst. And I'm way to cheap to pay someone else $90 to process my venison for me. We also discovered CWD in our state, so cross contamination could be a problem. I'm guessing a lot of wild game processors might stop taking deer and elk, because if an animal tests positive they have to notify everyone who had game processed during the same time period.
