📝 KETO GINGERBREAD COOKIE RECIPE 📝
3 tbsp melted butter
1/2 cup brown swerve
1 tsp maple extract
1/2 tsp vanilla extract
pinch salt
1/2 tsp baking soda
1 cup almond flour
2 tbp coconut flour
1/4 tsp xanthan gum
1/4 tsp cinnamon
1/4 tsp nutmeg
2 tsp powdered ginger
1 egg

Bake 350 degrees for 10 minutes. Makes 12 cookies.
Per cookie: 91 calories, 1.3 net carbs, 8.1g fat, 2.7g protein

These look yummy! It seems that Xanthan gum is the secret ingredient I've been missing in my cookie recipes! Keto baked goods taste great to me, but I I have always felt like that "soft, chewy" consistency is missing in the keto cookies I've baked thus far. Totally loving your 12 days of Christmas :) Can't wait for tomorrow's video!

I just made these, but didn’t have vanilla extract, so subbed with almond extract. Soooo good! Two of my three kids really like them, so YAY! Thank You!
