I just made this cake not even 4 hours ago and it is stellar!! I absolutely love Monique’s cooking style and the fact that she uses real ingredients and keeps it simple! As a child, she had a powerhouse of influential women in her home and it lives on through her cooking! I found Monique in 2014 and recently purchased her cookbook! Monique girl, I made this cake a few weeks ago for the residents I cook for at my job. Let me tell you that this is THE ABSOLUTE BEST CAKE I have ever made. I scaled it to make enough for like 96 portions and it made a ton of batter. Like enough for like 3 and half hotel pans so it was plenty to serve for 2 meals(next time I'll scale it back a little bit). One of the staff members had a piece and told everyone else about it, to the point where they wanted me to make it for the Spring Fest that same week. They kept taking like 2-3 pieces at a time, also I had 2 other staff members ask me to make them one a piece. I of course told them it wasn't my recipe because I didn't want to take all of the credit. But this recipe is dangerous and should be locked away never to be released again( lol JK)
