This method works actually well on making not just making circle coffee jellies but fruit jellies. I do this for my nieces and nephews. Poured over some milk and ice. Made with blended juice. And less sugar. I substitute honey as sweetener.

I’ve tried this in a local boba store before! I’d say grass jelly is used because it can break apart easier and be sucked through a boba straw, but gelatine is more hard and cannot be broken down so easily, so grass jelly is used. Also it goes really well with milk tea
