Ice Cream Topping
Spicy Candied Pecans
1 cup pecan pieces
1 tablespoon butter
½ cup maple syrup
½ cup orange juice
½ teaspoon kosher salt
½ teaspoon cayenne powder
Melt the butter, sugar and spices in a medium nonstick frying pan. Once the sauce begins to bubble, add the pecans and continue simmering until the sauce begins to thicken, about 10 minutes.
Pralined Bacon
1 pound medium thick bacon
½ cup (or more) brown sugar
Do not preheat oven. Arrange bacon in a single layer on a cooling rack set atop a baking sheet. Evenly spread brown sugar over bacon. Set oven to 400°F, 200°C, gas mark 6 and place brown sugar covered bacon on the middle rack. Bake approximately 20-25 minutes or until sugar has melted and bacon begins to brown.
