I would say that at first Godzilla would win hands down within moments, but after a few battles or perhaps several battles, SCP-682 would have effectively adapt to all of Godzilla's attacks to the extent of negating them entirely and then would take the win from then on. Yes Godzilla has incredible adaptability but he has been taken down a peg by monsters that are, in my opinion, lesser than 682 and I do not think Godzilla's (not even Shin Godzilla's) adaptability is on par with 682.

This depends on the godzilla they use imo. I think it would be more interesting to watch if Shin Godzilla fought 682, as they are really similar. And that one time 682 gained a radiation blast basically made him a smaller shin.
