I think you are right, brother. I know you are talking to a camera but it does feel more personal.

Thanks for answering my question. I am using a laptop and I haven't quite figured out how to archive everything. Right now I've got a big raid hard drive but I'm filling it up quickly. Wish I could swap out drives like you do but you know Apple can be with stuff like that. lol.

Love the idea of doing a collab. My wife's family is in Temple so we got down there every now and then. Hopefully we can swing something at some point. Even if we don't end up doing collaboration, I'd love to just meet you guys at some point.

I really like this format. It was a good idea. Take it easy, brother.

Beans in Chili up here in New England for sure. Clam Chowder is a staple here too.You mentioned that when you use Lump in your Big Joe when trying to cook at low temps it tends to smolder. I had the same problem but I found if I brought the heat way up and let it burn for a while then bring it down slow before I put meat on it works out well. I think the problem is the Lump isn't completely lit before I started Smoking. I don't know how you are doing it but I feel this helped me. You Tube is wonderful Community, I met some great people, you included.Great series Troy, I like it.

Hey Troy thanks for the reply on your Thursday. Yep you got the name right.
So far as a beginner I've done the chicken, pheasant breasts, salmon and just did your fast and hot butt roast. Pleased with the results of all.
Here in Wisconsin the weather temps are on the way down. Any advice or tips for cold weather smoking or just pack it up for spring. Love your channel. Learning a lot about how to use my WSM

I like mixing my woods also. I really like the apple and maple wood combo. Very unique taste...not overpowering and if I desire more smoke I can give the meat more without it getting bitter. If you havent tried apple wood on spares or babybacks....you are in for a treat. If you ever get some maple...try mixing that. You wont be disappointed. Im grateful for your channel. I learned a few things from you and I really appreciate it brother.
