One concept I would like to see in future Star Wars media is Jedi surviving Order 66 by disguising themselves as Clonetroopers. There was the deleted concept of having clones disguised as Jedi in ROTS, and I think it would be really interesting to see the opposite happen. Of course, this tactic wouldn't work for Jedi that are really big, short or have horns/headtails

Jedi I knew survived before watching this video: Obi-Wan, Yoda, Luke and Leia (if they count), Ahsoka, inquisitors who were Jedi (if count), Grogu, Caleb Dume/Kanan Jarrus, Ezra Bridger, Quinlan Vos, Nari, Cal Kestis and 50% of Anakin (if count)

Don't forget Tholme, Quinlan Vos' master, who was killed by Ventress in Canon but survived Order 66 in the Expanded Universe according to the Star Wars: Republic comics.

Shaak Ti (possibly) survived Order 66 - all of her deaths are technically non-canon. There are two deleted scenes of her death in Episode III, but they're just that, deleted scenes, and thus non-canon. So it's entirely possible she survived. Her other death scene - at the hands of Galen Marek - is also non-canon now.
