Here's a couple:
To hang up a phone call, you can simply say, Hey Siri, hangup, instead of touching the display.
So knowing your video would trigger my HPmini, I simply said, "Hey Siri, stop listening. Siri will then ask to confirm. 
To reactivate, you either touch the display and say Hey Siri, start listening or toggle Hey Siri in the Home app.
HPmini comes with 7 ambient noises: Fireplace, Forest, Rain, Fireplace, Night, ocean, Stream and white noise. Simply say, Hey Siri, play Forest sound.

A few other good ones:
“Hey siri, remind me to go to the store tomorrow morning” —> creates a reminder on the reminder app scheduled for probably like 10am the next day
“Hey Siri, remind me to talk to my boss when I get to work” —> reminder shows up when you arrive at your work place (if you set a location as your work place.”
“Hey Siri, do I have any messages?” reads your unread messages
“Hey Siri, add this song to my library”
“Hey Siri, add this song to my playlist.”
“Hey Siri, I love this song.”
“Hey Siri, send this song to ____” sends an Apple Music link of the song to the recipient.
Additionally, homepod works as a hub for Apple music between your devices (although it’s glitchy maybe 30 or 40% of the time). You can control your HomePod’s playback from any device.

I can't watch your video because I have to keep stopping my homepod from picking up all your commands, setting alarms, changing light colours etc...

That’s funny! I was watching this on an ipad in a bedroom, and my HomePod mini in my living room heard you and started playing music… Doris Day, but hay, that’s a pretty sensitive microphone!!! I just told Siri to turn off the music from the bedroom and it worked like a charm. Hehe

how you would command siri to stop playing youtube on apple TV instead play a music ?
I tried many commands, wasn't successful to override a playing youtube by some music,

So what determines which device responds to a hey Siri command such as set a timer for 20 minutes? How does the HomePod know I am addressing it for the timer and not my telephone?

I created a shortcut for turning on the tv that asks me what app I want to run and if I want to set the lighting scene. It tells me that it turned on the tv and what scene, if any, I selected. All accessible from the HomePod.

Those music commands work only with the Apple Music app not with Spotify, right?
