Hi everyone. Today's dish is Okonomiyaki, also known as a Japanese savory
pancake. Okonomiyaki originates from Osaka and is one of the most beloved soul foods in the region. Since I was born in a city next to Osaka, I grew up eating lots of Okonomiyaki. So today, I'm proudly introducing an authentic okonomiyaki recipe. I'll leave all the ingredients below. I hope you'll like it! Have fun cooking Japanese food😊

Ingredients ( Portion for 2)
Okonomiyaki Batter ingredients
* Cake Flour (100g) (You can substitute it with all-purpose flour.)
* Baking Powder (1tsp)
* Water (150ml)
* Instant Dashi (1tsp)
* Soy Sauce (1tsp)
* Salt ( 2 pinches)
* Eggs (2 Large)
* Tempura Bits (10g)
Note: I forgot to mention in the video that the baking powder helps to make the Okonomiyaki fluffy and creates a nice crispy crust. Also, some people prefer to add grated mountain yam to the batter to make Okonomiyaki fluffy, but I assumed it's hard for many of you to get it. So, I didn't include it in today's recipe. If you want to add it, add only 20 grams of grated mountain yam to the batter. If you add too much of it, the gooey texture of the mountain yam will remain inside even after it is cooked. But, the baking powder takes over mountain yam's job perfectly, so you don't need it.
And if possible, please try to use Tempura bits that contain shrimp or squid.
Those tempura bits enhance the flavor of your Okonomiyaki big time.

* Pork Belly Slices (180g) ( fine to use Bacon, but it's not authentic.)

* Katsuobushi ( Dried Bonito Flakes)
* Aonori ( Dried Green Seaweed Flakes)
* Beni Shoga ( Red Pickled Ginger)
An Alternative to Japanese mayonnaise
* Non-Japanese Mayonnaise (150ml)
* Soy Sauce (1Tbsp)
* Sake (1tsp)

* Ketchup (2Tbsp)
* Worcestershire Sauce (2Tbsp)
