You lot have very keen eye-sight and are very observant and often comment on the vanilla that I use in my videos. It got me thinking about vanilla and what's on offer out there vs. what you can make yourself. So I made a video to explain a few things! Hope you enjoy it! x

A lot of people who make homemade vanilla extract with vodka recommend leaving it to rest for 6 months to 2 years, depending on the amount of beans used. If you do decide to let it sit that long, please make sure all of the beans are covered in the alcohol or glycerin to avoid mold forming. What's great about homemade vanilla extract is that those same beans will continue to release flavors for YEARS. So feel free to let it rest then decant, refilling with alcohol or glycerin over and over for decades! Bear in mind that every time you decant some and refill the Source, you will need to start the waiting period all over again. Vanilla extract made from alcohol, once decanted, can last as long as you want, too. I personally did a 2 cup jar full of vodka with 5 Grade A Madagascar beans, cut in half, letting it rest for 6 months. Then I'm going to decant it into another jar when it's done and use as my supply for the year. Like cinnamon sticks, vanilla beans really are a perpetual extract source. :D

I wonder if you can educate us on chocolate next! The different kinds of chocolate and their uses, ways to temper chocolate, etc.! It would be super helpful! x

The most delicious vanilla I've ever used was made with spiced rum, steeped for 18 months before using. The depth of flavor is amazing. My cakes and frostings were always good, but with the vanilla made with spiced rum....they were taken to another level of deliciousness. Everyone I've given some too, refuse to go back to vodka based vanilla. Try it.

I've always used Vanilla essence, and it did always tasted fine. But yesterday I got my hands on real vanilla extract (Nielsen-Massey Madagascar vanilla extract).. And now I can't wait to use it!🤩 And oooh the smell...!🥰😍

thank you so much for this video Jemma! I'm italian and vanilla extract is quite impossible to find in my country. watching english/american recipes was sometimes frustrating for the wide use of vanilla extract in them and I was always like *WHY* until you made this video. love uuu
