I tried Luke's PUMPKIN PANCAKES from Gilmore Girls! Ingredients Source: @gabbyjaye
✨Recipe:
2 cups flour
½ can pumpkin purée
1 ½ cup milk
2 eggs
3 tbsp butter, melted
2 tbsp light brown sugar
1 tbsp baking powder
1 tsp vanilla extract
2 tsp pumpkin spice
½ tsp cinnamon
¼ tsp ground cloves
¼ tsp salt
CINNAMON BUTTER:
½ cup (1 stick) butter softened
½ cup powdered sugar
2 tbsp honey
1 ½ tsp cinnamon
½ tsp vanilla extract
pinch of salt
Directions:
1. In a bowl, combine pumpkin puree, milk, butter, sugar, and eggs. Whisk together until well combined. Add vanilla.
2. Then in the same bowl combine dry ingredients and spices, mix to remove all clumps
3. THE CINNAMON BUTTER SAUCE: combine all ingredients together. And whip it until it’s completely combined.
4. Make pancakes on stove top.
5. Stack up, serve with cinnamon butter in a piping bag and drizzle syrup overtop.
6. Serve and enjoy!! 😊
