what should we make next??

here's the recipe:
(makes 5-6 pancakes)
- 1 1/4 cups flour
- 2 tsp baking powder
- pinch of salt
- 1/3 cup pumpkin puree
- 2 tbsp brown sugar
- 1 egg
- 2 tbsp melted butter
- 2 tsp vanilla extract
- 1 cup milk
- 1 tbsp pumpkin spice

for the whipped cinnamon butter:
- 1 cup butter
- 1/4 tbsp brown sugar
- 1 tbsp cinnamon
- 1 tbsp vanilla extract

1. To make the butter, start by browning the butter over medium heat. Once the milk solids start to brown, turn off the heat and cool the butter until it's softened and no longer melted/liquid.
2. Once softened, whip with the brown sugar, cinnamon, and vanilla until it's pale and fluffy. Set aside for later.
3. To make the pancakes, whisk together the flour, baking powder, and salt in a small bowl.
4. In a medium bowl, whisk together the pumpkin, brown sugar, egg, butter, vanilla, and milk until combined.
5. Whisk the dry ingredients and pumpkin spice until just combined and set aside for 15 mins before making the pancakes.
6. In a pan over medium heat, melt butter and pour 1/4 cup of batter into the pan. Once lots of bubbles rise to the surface of the pancakes and the edges are dry (~2 mins) flip and cook on the other side.
7. To serve, stack your pancakes and pipe on a generous amount of the butter and serve with maple syrup. Enjoy :)
