I do know this and it's very cool, pretty sure it first existed as a way to patch up errors in Vader's saber being different lengths in the OT lol

So, this isn’t about the focus crystal, but some Jedi had a second kyber crystal in their regular saber for when they needed it below the watersurface. This caused that lightsaber to switch crystals fast enough to stay on.
One of the most famous Jedi who had this was Kit Fisto.

Kanan and Ezra both had lightsabers that could adjust length and be used as training sabers. We see this when kanan is first teaching Ezra and when they are preparing to go to malachor

Kitt Fisto used two kyber crystals in his saber. The second was his padawan's crystal who died in combat. This technique was rediscovered by him (Don't remember the ignition or what it was called). The blade twisted like a double helix and it allowed him to utilize his saber underwater.

Maul sustained his life force for 4 days inside the compression furnace while he created the four crystals it took to power his saber staff. He was the last apprentice that Palpatine ever allowed to do it because of the risks and the time frame he was working on. He had maul from the time he was a child.

During the yuzan vong invasion, one of the jedi (can't remember who, Coran Horn? Maybe?) was able to switch which focusing crystal was used while the lightsaber was active. He used this technique to catch a vong warrior unprepared and kill him by suddenly doubling the length of his saber mid duel skewering him through the eye if my memory serves me right.

In Rebels Kanan tells Ezra how to adjust the length of his saber while training him in one of the early episodes, meaning Kanan had one of these

In Star Wars: The Force Unleashed you can select a Color Crystal that (obviously) changes the color of the blade and a Power Crystal that changes some minor attributes of the lightsaber, like additional damage.

Some lightsabers had many fractured kyber crystals to make a flexible rope like blade

Vader would constantly change the length of his blade. Either making it longer to strike and opponent who thought they were just far enough away. Or to bypass a block by shortening the blade causing them to get off balance.

Qui Gon Jinn used one, it is mentioned in a book when he was trying to cut off an explosive collar that slavers had put on Obiwan. He tried to use it to cut the collar off but the lowest setting didn't work he was not sure if anything higher was safe.

If I remember correctly, a lot of lightsabres actually ended up with a second crystal due to underwater combat with the lightsabre because with one crystal, it could not properly function on the water and would go out

Focusing crystals are not always synthetic, as you can see in KOTOR, most of them grow in caves with other crystals
Some of them are extremely rare and grow only in specific place.

I had a Jedi character in a TTRPG that used 3 crystals. It allowed for a lot more tuning of the blade, including harmonics, color, length, intensity and nearly everything you could think of to adjust on the blade.

Agen Kolar did which was to honor his padawan who died at the first battle of geonosis and it allowed him to change the color of his blade from blue to green
