Ingredients:
1 kg octopus, washed
1 jar passata
4 tablespoons extra-virgin olive oil, extra for drizzling
3 cloves garlic, crushed
2 tsp red chilli flakes
1 red chilli
5 anchovy fillets
1/3 cup capers, drained
1 Italian country bread, sliced and toasted
1 bunch fresh flat-leaf parsley, leaves picked and chopped
Maldon salt, QB

In a pot, heat up olive oil. Add the anchovies, garlic, chilli flakes, and capers and stir. Then, add the octopus, red chilli, and passata. Bring the sauce to a light boil and then reduce to medium-low and cook for approx. 4 hours, stirring occasionally. Remove octopus from the pot and chop it into pieces and put back into the sauce.

Toast bread in a pan and lightly drizzle the bread with olive oil on both sides. Remove from the pan once crisp and golden.

On each slice of bread, add a layer of the ragù sauce and parsley. Add the octopus and finish with a sprinkle of maldon salt. Enjoy!

This is the way my grandmother did it! Except she used grated Parm, and she soaked the raisins in warm water for 10-15 minutes to replump them. 👌👌👌 Thanks for sharing!❤️

I swear…this looks like my lunch last week in Vietri Sul Mare, Amalfi Coast. Likely the best lunch of my trip. Worth the 17 minute walk uphill from the port!!
