Leveling the sand base is the most important part of building a small DIY brick patio. If the sand base is done right, laying the pavers is super easy.

The key to leveling the base are the poles and your screed. Set the poles one at a time and measure down from your string line to make sure they're level and pitched properly.

Once the poles are set, use a long screed to level the sand. I'm using a 2x4, but a metal screed works better if you have one.

Use a trowel to remove excess sand from the edges and to smooth the surface of the sand.

Once the sand base is level, run a string line to help guide you as you lay pavers. Then start installing.

When we bought our house, I was the guy always doing stuff. I'm very handy and everything I did looks great. I was more than willing to pay a guy to do the paver patio out back and the paver seating area in our front flower bed. It looks amazing and I am BEYOND happy I got a professional to do it.

Best tool for this, level made from a square steel tube with small angle radius.
Patio laying is an actual profession here. Those guys all use steel levels in all kind of lengths.
Big patio builders, like making a large parking lot, use a kind of steel scraper with wheels. Because that kind of work doesnt need to be perfect.

Skip the pipe, just pin it, string it and then practice them screed techniques, and don't be afraid to get in the sand. Then your pin and string is ready for your pavers.
Nice job on troweling that sand, but I prefer Pea stone gravel for my baase and use sand in my joints after.
