One trick I’ve seen is to put a steel lid on top of chicken patties to trap some heat and melt the cheese quicker.

I always seem to learn a new kitchen technique watching T's vids, but resurfacing plastic cutting boards (while it looked cool) won't be one I will use -- I've tried very hard to minimize plastics for the reasons T mentioned! Those smashers looked very tasty, as always 👌😊👍
