Honey is antibacterial and antiseptical.
Honey was even used to preserve human corpses (mellified man).
So as long as you use enough honey and don't dilute it to much, the sugar in the honey shouldn't have a negative effect on the meat.

Honey also has some antibacterial properties, it also has none neutral phone( as far as I can remember), so it's fine.
