"Aioli" originally comes from catalan "allioli" which literally means "garlic and oil"... so yep. Originally it should only be prepared only with oil and garlic, I believe, no eggs involved.
Edit: it's actually Valencian, not Catalan. My bad.

When caramalising onions, I find that when the pan and onions are hot, if you poor a bit of water in it browns the onions. Then pour some more water in afterwards and it keeps it cooking and caramalising whilst preventing it from burning.

A tip for caramelizing onions, (that I learned from BA lol). Add a little water to the pan if the onions are getting too brown too quickly. It cools down the pan and the onions reabsorb some of the water making it harder to accidentally crisp up or burn. Also not adding all your onions at once helps too. It’s worked really well for me and I
used this method quite a few times even on different stoves.

Traditional aïoli does not have egg/egg yolk, which is why I stand by hating mayo and liking aïoli.

Native speaker here. The word "alioli" comes from the catalan language and it's comprised of two words "all" (garlic) and "oli" (oil) since the original recipe was made only with these two ingredients.
