Ingredients for the salad that I made:

Roasted beets
Tahini
Yogurt
Lime/lemon
Parsley
Ground cumin
salt&pep

How to salt roast the beets:

1. Thoroughly wash them and dry as best as you can. Cut in half.
2. Pour a hick layer of salt on a kaimg tray and palce the beets cut side down. The salt layer should be thick so the juices don't burn at the bottom.
3. Roast at 200°C (400°F) until you can pierce it with a fork. It will take about 40-50 minutes depending how big your beets are.
4. Once they're done I like to run them under water to wash off the salt (sometimes they can be too salty on the outside). Peel the skin with a knife, it's a tedious process not gonna lie. If you've found a way how to peel them easily, let me know. 🙏

You can also just peel raw beets, cut them into bite size pieces, cover with olive oil, salt and roast them just like normal. Just as delicious!

Try adding walnuts and garlic to your recipe. Alternatively, you could mix roasted beets with pickled cucumbers or sauerkraut. If you're not fond of the taste of beets, you can add a little of it to the sauerkraut to balance the sourness with sweetness, and it will add a nice pop of color to your plate.☺️

acid of any kind neutralize the chemical that create the geosmin (dirt smell). So maximizing surface area and acids (like in borscht) always works great in neutralizing it.

I actually like beets a lot and eat them just cooked as they are, but I think they pair really well with aceto balsamico. And maybe some walnuts and feta if you will :)

I've never seen someone salt roast something before. Look at you showing me new ways to cook things! I actually like beets though. I used to even juice them and their stems. But I like that you showed this process.

I love beets! Shredded beets, cabbage, carrots with onions, garlic salt and black pepper makes a great salad. Combined with hummus it's a dream. ❤

The best way to eat beet in my opinion is to just shred it raw together with an Apple and put fresh Limejuice over it. It’s so fing The Tartness and sweetness kinda cancels out the dirt

I’m so glad to hear about reusing the salt. That always stressed me out about salt baking/roasting. Salt, while plentiful, is still a finite resource and it always felt so wasteful.

Taste of “dirt” mostly depends on sort of beets :) some of them are perfect for soups (borscht etc) and pickling, some - sweeter and softer - are great to be eaten boiled/baked in salads.

You can try to figure out what kind of beet you have by scratching surface - if peel is thin and juice if going out easily, it will be sweet and more tender. Also juicy ones are usually more heavy (compared to others similar in size, obviously). The more you’ll pay attention to this veg, the easier it will be for you to know what kind is it, even without touching.

Also, when you cut beet, the more white “lines” you can see inside, the better it will be to used is soup :) “salad” beets are evenly tender and pink inside. But of course, I will eat all the beets, love them!

I have trouble with beets. I always forget I ate them, and then freak out later. Love the taste though.

Try blending down the roasted beets with the goat cheese, and some mascarpone or similar consistency cream and a little oil of your choice, so it becomes a mousse, season it with a little garlic, a sprinkle of thyme and lots of fresh basil. It's great for wraps with ruccola, spinach, leek sprouts or whatever you like.

You should really try them sautéed with onion, garlic and ginger - sprinkle of salt, pepper and rosemary and we like to add either potatoes or carrots. It’s from a dish called Keysir in Ethiopia - I grew up laughing their sweet taste.

As someone with chronically low iron, beets taste like dirt to me too -- but in the best possible way 😅 I love them!! Matcha tastes like bad dirt to me 🥲

I freaking LOVE beets. They do taste pretty earthy but also sweet and just lovely. So underrated. They just need to be cooked correctly. I’ve never tried this salt method but I’m excited to give it a go! Thanks. 😊

You can also try salad called Vinigret. It’s boiled(or can be baked) potato, carrot and beet, plus onion and pickles with sunflower oil.
