how do you tell the difference between male or female tree?

The males don't have flowers. You have so much garden space, it should not be a problem finding the sunniest place for them. It should be ok to relocate them if you dig them up before they start waking up. Make sure you dig around them a way out as the roots are very long.

Did you have to fertilize them in any way? I just got my first Start of aLtai this spring, very excited!

What sand do I need to put into the soil for my sea buckthorn plants? Sharp sand or silver sand ?

You have to spread seaberry 4 ft apart or they will be crowding . They grow the size of small trees.
