I would have just said that since the sequence is convergent, then only a finite number of its elements do not lie within the neighbourhood of limit, thus we can pick the smallest and the greatest out of these elements. They will be our lower and upper bounds.

was there any material reason to set epsilon=1 in the proof? Seems like it would work for any epsilon.
