Williams Sonoma commented below: "It should be 350ºF. And while he suggests 1 1/2 hours, we'd recommend 2 1/2 to 4 hours if you can swing it—the short ribs will only taste better with more time! Hope this helps." Edit: Based on comments, most people prefer ribs that have been cooked on the longer end of the scale, so plan ahead and account for a longer cook time to reach the desired results :0!

This is so simple I come back and review it and make this every 6 months. Awesome! Except I always have to go find an oven temperature on another recipe.

Le Creuset Manufacter says: never heat the empty pan or allow to boil dry. Either action can cause permanent damage to the enamel and pan.

I have my Magnalite Professional Dutch Oven and skillet. I don't have to worry about all the concerns with Enamel damage. I can add ingredients hot or cold. Heck I can even rinse my hot skillet under cold water without damage! From stove top, to oven or broiler. They are thick and tough, I am truly lucky to have found my set nearly 30 years ago. I've never felt like I've needed to replace them. I can't wait to make my short ribs in them for tonight's dinner...

That pot needs oil or liquid proor to heating. Enamel will crack eventually if do that repeatedly. Le Creuset 101.

I'm gonna use this exact same method and recipe with beef oxtails but only with a three hour bake instead, l'm guessing at 350 to 375 degrees?...

Never heat the pan without adding oil first. All of these enamel cast iron companies tell you to never heat it dry. I dont understand how this guy doesnt know that.

The collagen hasn't had time to break down yet. He has no idea how to cook this cut of meat. It won't be tender until 2 hrs at the very minimum.
