You may be able to find the grass fed beef gelatin at the grocery store! Look where gelatin and Jello are. My Walmart has it at a much lower cost than Amazon.

My college kid just polished off the last of these tasty gummies. Do you make homemade fruit gummies with gelatin or agar agar (plant-based alternative)?

I used gelatin made from grass fed beef. The darker gummies are elderberry syrup-based and the brighter ones are lemon ginger with zest. After three experiments, I settled on these ratios for the best texture and results:

1 cup of concentrated juice, cooled if previously simmered with ginger, herbs, etc. (Strain the juice if you have ingredients you don't want in the final gummies). We like zest in the lemon-ginger flavored ones but not bits of ginger. See link in comments for elderberry syrup recipe.

1/4 cup + 1 teaspoon gelatin whisked into the cooled juice. It will thicken.

After the gelatin is fully dissolved, add 3/4 cup of very hot, purified water, and mix until smooth.

Carefully pour into molds (on a tray) and refrigerate 2-3 hrs before popping out of the molds.

Keep gummies in the refrigerator in single layers between parchment. Should last 3 weeks if they make it that long.

Gelatin is a source of collagen which supports joints, hair, nails and skin. It's also high in protein and helps repair the gut microbiome. If you already eat meat, gelatin utilizes other parts of the animal that would otherwise go to waste. If gelatin grosses you out or conflicts with your religious or cultural beliefs, try agar agar (derived from seaweed). The ratios will be different. I've used agar agar before years ago. Will try it again to compare textures and nail down the amounts.

Lemon-Ginger Juice (For Gummies) Recipe
These were a huge hit with my husband and kids. I simply took 3/4 cup of lemon juice (use 1 cup if no sweetener will be added) and simmered it for 10 minutes with 1/4 cup grated ginger (no need to peel the ginger). I strained the ginger out and added lemon zest and 1/4 cup total of maple syrup and honey. The goal is to have only 1 cup of liquid that you will combine with the gelatin. Follow the recipe above to add the gelatin and boiling water.
