You can hear the motor power switching circuits. To avoid wheel spin, excessive current in the motors and toppled grannies, the power has to be increased gradually. As the pitch increases, so does the motor current. The current is pulsed on and off at a high rate. As the pitch rises, the on-time increases and so does the motor power.

The electric motors have these things called "inverters" which switch the current's flowing direction. These are alternating current (AC) motors; direct current (DC) motors don't usually have inverters
